RV kitchens are smaller than those in an average home and can become hot rather quickly, so you may be tempted to avoid cooking and grab fast food. Cooking in your RV allows you to prepare nutritious and affordable meals for your family, though, so it pays to know some strategies to make meal preparation easier.
1. Use That Slow Cooker
This underrated tool needs to be front and center in your RV dinners! There are thousands of great slow-cooker recipes that include vegetarian options as well as diverse choices, from chilis to stews to roasts to pasta dishes. Fill up your slow cooker in the morning with ingredients, add liquid, set the temperature and go about your day. When you come back to the slow cooker in the evening, you’ve got a hot meal ready and waiting for you.
2. Prepare Cold Meals
Of course, not cooking so much is still a useful strategy, especially on really hot days or days when you’ve done a lot of strenuous activities. Turn dinner into a sandwich bar with all the fixings, including pickles and chips. Take leftover meat and pasta and turn it into a cold pasta salad. Cut up fruit and mix it with yogurt and granola for breakfast parfaits, or make a smoothie with frozen banana pieces.
3. Batch-Cook at Home
If your RV has a spacious freezer, make the most use of it by preparing your favorite lasagnas, stews, and other freezable meals at home in large batches. Freeze single servings in tupperware that you can take out and microwave as needed.
